YUM! Frozen Mocha Cheesecake:
Crust:
1 1/4 cups chocolate cookie crumbs
1/4 cup granulated sugar
1/4 cup butter, melted
Filling:
8 ounces cream cheese
1 can sweetened condensed milk
2/3 cup chocolate syrup
2 tablespoons instant coffee
1 tablespoon hot water (or to desired taste)
1 cup whipping cream, whipped
In a small bowl, combine crumbs, sugar and butter. Pat mixture into a 9-inch springform pan or a 13 x 9-inch pan, covering both bottom and side. Chill.In a large bowl, beat cheese until fluffy. Add milk and syrup. Beat until smooth. In small bowl, dissolve coffee in water. Add to other mixture. Mix well and fold in whipped cream. Pour into chilled pan. Cover and freeze for 6 hours. Garnish with additional cookie crumbs. ENJOY
Bible Conference was last week and it was very good. Mark Fisher who graduated from CBI like 6-7 years ago came here from Colorado and shared with us from the book of Matthew. It was very good. Some days I felt like my brain was going to blow up because it was on overload, but it was very good stuff. Just a lot of info to comprehend at once. I was very encouraged how he kept bringing everything back to Christ and how he was a servant. I could go on and on...it was a very refreshing week! Wish there was more!!
During Bible Conference I got to see Ellie again and had the privilege of meeting Kady Smith. I had a lot of fun getting to know them more. We laughed a lot!!We had a lot of fun...even if Mark did spit on us since we were sitting in the front and the joke about a red head, brunette, and blonde...he noticed that it was us...too funny! And we laughed some more!! Thanks Ellie and Kady for a great week! I miss you guys already!!
